Roasted/Slow Cooked Pork Shoulder
Ingredients:
3 lb MountainView Farm LTD boneless shoulder roast
1 onion, chopped
3 potatoes chopped
3 cups sweet potato chopped
2 cloves garlic, finely chopped
Salt, black pepper, rosemary, coriander
1 cup of water (substitute apple juice to make it sweet)
Directions:
Preheat oven to 350F if using a roaster.
Dry rub shoulder roast with salt, black pepper, rosemary, and coriander (or your favourite seasonings)
Put roast into roaster or slow cooker
Add onion, potatoes, garlic, and sweet potatoes around the roast.
Add water to the roaster/slow cooker.
Place roaster in over for 45 min, then check the internal temperature with a meat thermometer.
If using a slow cooker, turn on to high for a 2-3 hour cook time, or low for a 4-5 hours.
Remove at 155 F if using as a slicing roast or cook until 200 F if you want to shred for pulled pork.
Cooked vegetables are delicious eaten as a side or can be blended to make a fantastic sauce.
